For the tired parents, burnt out moms, single moms juggling work, virtual teaching/learning and household duties, the last thing you may have time and energy for is spending your “day off” cooking all day. For me, as as single momma, 2020 has created a new level of exhaustion and anxiety navigating doing work I would normally be doing alone outside the home, with full time parenting, teaching and meal prep. All I could think of this year was how to spend the day NOT cooking and cleaning, but also eat a traditional style Thanksgiving meal. My Whole Foods finds this year made it possible for me to create a tasty 15 minute Organic Meal for Thanksgiving.

Whole Foods Rotisserie Chicken– Hormone Free and Vegetarian Fed

Organic Whole Foods Stuffing Mix– Butter and Water is all you need for this quick, easy, and delicious stuffing

Whole Foods Cranberry Jelly (organic) – I love the old fashioned jelly style cranberry and this one hit the spot

Whole Foods Canned Sweet Potato & Butternut Squash (organic)- Slaving away boiling/baking and peeling sweet potatoes was just not going to happen. I loved this quick solution for traditional sweet potato casserole that I love so much. Mixing both with butter, seasonings, egg and sugar followed by a quick bake in the oven made for an easy dish

Whole Foods Canned Half Pears (organic)– I love pear flavor with chicken and stuffing. This was the perfect addition to complete my 15 minute meal

I have never had such an easy and delicious Thanksgiving! I can’t wait to try out other quick sides as I experiment with quick and healthy meals. Happy Eating!
